What you fail to grasp is the amount of mutations needed for two different things, stealth and color
one is simple, thus can happen in a short time given the right circumstances, the other takes millions of years

cats' stealth relies on various evolutions from an ancestor that wasn't stealthy
the colors of these mothes are already inside their DNA

2 - this is not a drastic change at all, color and pattern changes are very common in insects (and I know this first hand as I keep and breed phasmids, which some develop different patterns and colors in relation with what they eat during their development, search Extatosoma Tiaratum)
In fact, this is not true evolution, as it is intended in the OP, only a change in the proportion of this animal's genotype in this population
