I'm gonna be a nerd about this:
They can die of critical injury, and the transformed form (as a car) is just some sophisticated cloaking mechanism.
When they die, they can't "stay in shape" anymore but my best guess is that, if you fukkin rek a transformer car physically, it'll stay as a car, you'll have to replace all "transformer" parts with essential parts like engine etc, it would be possible lore-wise.
