I do it this way:
slowly cook the "guanciale" (not ham, not bacon) in a pan, in the meanwhile mix eggs, pepper and pecorino and cook the spaghetti. When spaghetti and guanciale are ready, I put the spaghetti in the guanciale pan, mix it and then put it in the same cold bowl where I previously mixed the other uncooked stuff. No need for cream at all.

Anyway I think it's impossible to find the "correct" recipe for carbonara and I'm open for experiments

But it's not the right cheese for Carbonara. The right cheese is Pecorino ("pecora" = sheep)
