The Arabic world's service to knowledge? Maybe II, I mean 2 Google searches. Try "Islamic medieval science", "Mathematics", "Medicine" or "Astronomy". The most basic Wikipedia articles will do.

Because only the fastest person (or, maybe the fastest 2-3) can actually offer their place, and based on the phrasing, the percentage likely refers to the number of times anyone offered a place.

However, they either conducted the experiment an arbitrary, non-round number of times, or they actually tried to measure the percentage of people willing to offer their seat, which would be disastrously non-representative.
