They don't flip up/down or left/right, but front/back. The reason you seem flipped left/right is because you royate 180 degrees to face the mirror. This 180° rotation is equivalent to flipping left/right and front/back. The mirror only undoes the front/back, so that's why you seem flipped left/right. If you rotated 180° on another axis, lets say by standing on your head, you wouldn't be flipped left/right, but up/down.
