The real tip is the Icebath and peel right away (the white membrane stuff shrinks slower than the egg itself so by doing icebath and insta peel you get easy to peel eggs.
Another thing that helps is to use older eggs. The older the egg is the easier it will be to peel (thinner white membrane stuff) Fresh eggs are a *** to peel even with ice bath.
I only learned this when I worked in a restaurant. The head chef even made us do an experiment to prove it.
